So you are ready to eat at the Sushi counter, or order a la carte from
the Sushi menus. Would you like to know what order you are supposed to
order and eat different types of sushi?
If you only eat tuna and California rolls, go ahead and order freely.
The point of eating sushi is to enjoy it.
If you would like to impress the sushi chef or a Japanese client you
are taking out for a sales meeting, here is a general rule.
Start with a vinegared fish, like kohada (gizzard shad) or aji
(mackerel). This cleanses your pallet to start your sushi experience.
If you are not a fun of vinegared fish, you can also start with akami
(tuna, not fatty kind), as this shows the quality of sushi restaurant.
Then enjoy items with sweet sauce, like anago(conger eel)or syako
(mantis prawn).
Cleanse your palettes by eating a small amount of gari (pickled ginger)
or agari (green tea).
Continue with mild seafood (white fish), like tai (sea bream or
porgy)or hirame (flounder).
Next the bold flavored seafood, like toro (fatty tuna), ikura (salmon
roe) and uni (sea urchins).
Finally, conclude your meal with a roll sushi or a slice of gyoku (egg
omelet.)
